Taking time with food A Slow Food began when Carlo Petrini, an Italian journalist, was dismayed by the opening of a fast food restaurant on the famous Piazza di Spagna in Rome. He decided it was time to celebrate the fast-disappearing virtues of the slow production, preparation and eating of food.
